What I Ate on Wednesday – Registered Dietitian Edition

I was tagged by the lovely dietitian, Kate Scarlata, to participate in a fun post about what I ate last Wednesday. Kate is an expert in digestive health, IBS and FODMAPS and just released her NY Times Bestselling Book, 21 Day Tummy.
Dietitians from across the globe are posting what they ate on Wednesdays – follow the #WIARD to keep up with the fun. I love this concept because it’s a good reminder that healthy can be simple and delicious and that as RDs, we are not perfect eaters. We enjoy ALL foods in moderation. Well, that’s how I eat, anyway.

What I Ate Wednesday - Dietitian Edition | Peace, Love, and Food Here’s what my Wednesday menu looked like: For breakfast, I had an Acai bowl (frozen banana, acai powder, and coconut milk with a touch of maple syrup) with fresh strawberries, blackberries and homemade banana hemp granola (recipe via Julie Morris’ Superfood Kitchen). Acai Bowl | Peace, Love, and Food Every morning I also have a cup of black tea with a bit of honey and coconut milk creamer. IMG_3513  

For lunch, I had a veggie dog (leftover from Marathon Monday cookout) topped with pickled red cabbage and mustard with a baby spinach side salad with Love Beets roasted beets, pistachios, green onion and balsamic vinegar and extra virgin olive oil. I snuck a Bubbie’s dill pickle in there too.

I wanted to try Whole Foods’ Kombucha on tap – I grabbed the Pomegranate flavor but wasn’t a huge fan – too sweet for my liking and gave me a stomachache afterwards.

For a late-afternoon snack, I had a slice of toasted, buttered Easter bread, which is a special treat that’s dear to my heart and only comes around once a year!

For dinner, I met my friend and fellow RD, Elizabeth, at Darwin’s Cafe to work on a presentation and ordered their egg salad sandwich with lettuce, tomato and avocado on 7-grain bread.
