I’m not usually one to prematurely get into the holiday spirit. I’m the gal shaking her head in disbelief when stores are eager to hang holiday decorations the morning after Halloween. Meanwhile, it’s 60 degrees and sweater sans jacket season. And I’m still taking off my Halloween make-up.
But, alas, there is usually one single occurrence that takes place in November and it reels me in and wraps me up in holiday bliss. Usually, it’s the first snowfall of the season. This year, it was the Recipe Redux. This month’s timely theme is to add merriment to mixes – create a DIY offering from the kitchen for a holiday or hostess gift.
DIY has been gaining momentum over the last few years and we can thank Pinterest and its gazillion DIY boards for encouraging this crafty movement. Jump on the DIY bandwagon and think about how crafty and thrifty you can be this holiday season.
Cranberry Orange Granola
Yields 4 & 1/2 cups
2 tbsp coconut oil, melted
1 tbsp butter, melted
Zest of 1 and 1/2 oranges
Juice of one orange
1/4 c maple syrup
1 tsp cinnamon
1/4 tsp salt
2 cups rolled oats
1 cup slivered almonds
1 cup dried cranberries
Preheat the oven to 350 degrees. Melt butter and coconut oil in a small bowl. In a large bowl mix melted butter and coconut oil with maple syrup, orange juice, orange zest, cinnamon, and salt. Mix in the rolled oats and almonds until it has absorbed the mixture. Line a baking sheet with parchment paper and spread out the granola mixture evenly on the sheet. Bake at 350 degrees for 15 minutes or until lightly browned. Let cool for 10-15 minutes.
Dress ‘em up to add a bit of festive flair. Before you know it, you’ll be humming a familiar holiday tune and will be in the spirt in no time.
