I admit maybe I’m being slightly dramatic but I am so excited about my new discovery, kale chips. I heard of kale chips over a twitter discussion between foodies and fellow future RDs Megan and Janet. Megan was raving about them and since I love kale and know of its super food health benefits, I decided to give it a go. I first tried kale not too long ago when I made EatingWell’s basic sauteed kale. Comparing it to other vegetables, it does have a slightly bitter taste. If the bitter taste bothers you, try a few different recipes. There are definitely ways to mask the bitter flavor.
Kale, the Super Food
- Super packed with vitamins A, C, and K
- Super full of fiber
- Super source of calcium
- Super low in calories
- Super source of antioxidants
Kale Chip Recipe
Ingredients:
1 bunch kale
Sea salt
Olive oil
Directions:
Remove the stems from the leaves of the kale. Cut leaves into bite-size pieces. Wash l eaves thoroughly. Spread kale onto baking sheet. Drizzle with olive oil and toss with sea salt to taste.
Bake at 350-375 for 10-15 minutes. Kale should be crispy and browned at the edges but not burnt.
Kale chips make for the perfect healthy snack or complement to a lunch. Next time you’re searching for a crunch to go with your sandwich, steer clear of the tempting middle aisle processed chips.

Haha! That lentil & kale stew sounds awesome. I can’t believe they have a local mushroom forager for their mushrooms. Pretty cool!
